Chitosan is a natural biopolymer produced by the deacetylation of chitin, a major component of the shells of crustaceans such as crab, shrimp, and crawfish. A previous study indicates that Chitosan generally shows stronger bactericidal effects with Gram-positive than Gram-negative bacteria at the MIC (Minimum Inhibition Concentration) in 500~1000 ppm depending on the bacteria and molecular weight. Although chitosan is known to have important functional activities, poor water solubility makes it difficult to use in food and medicinal applications. Chitosan oligosaccharides (COS), also called oligo chitosan or chitooligosaccharides, are normally enzymatic products hydrolyzed from chitosan. COS which have a degree of polymerization (DP) between 2~20 (Mw: 0.4~4kDa), are water soluble and have attracted the interest of many pharmaceutical, food and nutrition researchers.

    There are many indications that COS may be developed as drugs against asthma and as ingredients in wound-dressings and vectors in gene-therapy.
