The waters of the Marlborough Sounds are crystal clear and offer the best conditions for the eco-friendly aquaculture organized by more than 450 mussel farms.

Green Lipped mussels are endemic to New Zealand: growing up to 25cm within 18 months, it is one of the largest mussel species of the world. Its oval, jade color shell is seamed by emerald colored lips around the edges. The flesh is full, plump and richly flavoured. The flesh of the female is a soft-blush apricot colour while the male’s has a pale creamy colour.

They are one of the most aromatic shellfish delicacies, enjoyed by food-lovers all around the world.
